Sugared And Spiced Pecans


Scott Bell adapted this recipe from one he found in a newspaper many years ago. He advises serving these as snacks or with a bitter-green salad mixed with blue cheese.

  • 1 egg white
  • 1 tablespoon water
  • 1/2 teaspoon vanilla
  • 8 ounces of pecan halves
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg

Preheat oven to 300 degrees.

Lightly beat egg white with water and vanilla with a fork. Add pecan halves to egg white mixture.

Stir until all pecans are coated with the egg white mixture.

Combine sugar, cinnamon, salt, cloves and nutmeg and add to pecan mixture.

Stir until all pecans are coated with sugar/spice mixture.

Transfer pecans individually to a 12-by-18-inch nonstick baking sheet coated with cooking spray, ensuring that the pecans are separated and dispersed evenly on the baking sheet.

Bake for 30 minutes, then transfer pecans to a clean, flat surface to cool.
