 Tzijiki (Cucumber Dip)
- 1/2 pint laban or quality plain low-fat yogurt
- 2 seedless cucumbers
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- Freshly ground pepper
- 1 clove garlic, minced or crushed
Drain laban or yogurt in a strainer lined with a double layer of cheesecloth. Place strainer over a bowl and drain 1 hour. Peel and seed cucumbers and cut into large pieces, then salt and drain 30 minutes. Pat dry with paper toweling and finely chop.
Combine all ingredients in a bowl. Mix well and chill at least l hour to blend flavors. Serve with pita toasts. Makes 6 servings.
