Tzatziki (Yogurt Spread with Cucumber and Garlic)

Pam Anderson includes this traditional Greek recipe in her "How to Cook Without a Book." She recommends serving the dip with warm pita bread, but it's also delicious with raw veggies.

1 cup yogurt cheese

1 cucumber, peeled, halved, seeded and grated on a medium-hole grater

2 to 3 medium garlic cloves, minced to a paste

1/2 teaspoon red wine vinegar

Salt and freshly ground black pepper

Olive oil for drizzling

Mix all ingredients except the olive oil in a medium bowl. Cover and refrigerate (can be refrigerated overnight). Transfer to a serving bowl, drizzle with olive oil and serve. Makes 1 1/2 to 2 cups.
