Garlic Broiled Shrimp
• 2 pounds large fresh shrimp, shelled and deveined
• 8 tablespoons (1 stick) butter, melted
• 1/2 cup olive oil
• 1/4 cup chopped fresh parsley
• 1 tablespoon chopped scallion
• 3 cloves garlic, minced
• 11/2 tablespoons fresh lemon juice
• Freshly ground black pepper
Rinse shrimp and drain on paper towels. Combine butter, oil, parsley, scallion, garlic and lemon juice in a large shallow dish. Add shrimp, tossing to coat. Cover and marinate in refrigerator at least 30 minutes, stirring occasionally.
Preheat the broiler. Place shrimp on broiler pan and broil 4 inches from heat source for 3 to 4 minutes. Turn and broil for another 3 minutes or until done. Top with a few turns of the pepper mill and serve with pan drippings over pasta or rice. Serves 4 to 6.
