Caramel Pie
• 1 egg
• 1 pint milk (2 cups)
• 1 teaspoon vanilla
• 3/4 cup brown sugar
• A lump of butter, softened (we used a tablespoon)
• 2 level tablespoons flour
• 1 9-inch deep-dish prepared crust
Beat the egg with the milk and vanilla. I used an eggbeater, in keeping with the Amish way. (They do not, of course, use electric mixers.) Then mix in sugar and softened butter.
Before adding the flour, we mixed it with a little milk to make a paste to get rid of lumps, then added it to the mixture. We baked the pie at 400 degrees for 10 minutes, then at 325 degrees for about 45 minutes, until a knife blade came out clean.
