![]() Oyster Sauce Baby Back Ribs
Kimo von Oelhoffen: "This is my father's specialty, and it's one of my family's favorite dishes. Once a year, our family goes to Hawaii to visit my family, and they know whoever makes the ribs is the family member we'll visit first."
Combine the ribs with the gingerroot and water to cover in a large saucepan. Bring to a boil and reduce the heat. Simmer for 45 to 60 minutes or until the ribs are tender; drain. Combine the oyster sauce, ketchup, brown sugar and soy sauce in a large shallow dish and mix well. Add the ribs to the dish, turning to coat well. Marinate in the refrigerator for 8 hours or longer. Remove the ribs from the marinade and place on a grill. Grill until done to taste.
Makes 4 to 6 generous servings.
