Farm Fresh: Strawberry cake is a luscious treat

Fresh strawberries are perfect for a dessert such as today's Farm Fresh recipe, Strawberry Cake. Our Farm Fresh guinea pig exclaimed, "It's like eating a strawberry sundae, only better."

About eight weeks ago, Jill Sciascia of Richeyville, Washington County, sent the recipe for Strawberry Cake. "This cake is great when the strawberries are in season," she said. And that's why we waited until now to share this luscious cake with you.

Strawberry Cake is made with yellow cake mix, another plus. It is covered with a luscious filling made with vanilla pudding and cream cheese. A layer of sliced strawberries is placed over the creamy filling, followed by a layer of whipped topping and chopped nuts. Whole strawberries are used for decorating the cake.

This recipe calls for 2 1/2 cups sliced strawberries plus 1 cup whole strawberries. We added more berries, and it only made it better.

Strawberry Cake

  • 1 box yellow cake mix

  • 5.9-ounce box instant vanilla pudding
  • 8-ounce package cream cheese, softened
  • 2 1/2 cups milk
  • 2 1/2 cups strawberries, sliced thin and cut into bite-size pieces
  • 1/4 cup granulated sugar
  • 8 ounces whipped topping
  • 3/4 cup chopped nuts
  • 1 cup whole strawberries or more

Prepare cake as directed. Pour batter into a 9-by-13-inch lightly greased cake pan. Bake as directed. Toss the sliced strawberries with 1/4 cup white sugar; set aside.

Allow cake to cool.

Mix pudding with milk; beat in cream cheese. Spread over the cake. Place strawberries with sugar in colander to remove juice. Spoon strawberries over pudding mixture, followed by the whipped topping. Sprinkle nuts over whipped topping. Top with whole strawberries. Keep refrigerated until ready to eat and refrigerate leftovers.

Note: Slices best when chilled.
