Ham A Nice Day

Doesn't sound fancy but it's quite tasty in its simplicity, due to the abundance of sauteed onions. The recipe is another from "The Accidental Gourmet" by Sally Sondheim and Suzannah Sloan (Fireside Books, $21).

  • 1 1/2 pounds new red potatoes
  • 1 1/2 pounds cooked ham steak
  • 2 large sweet onions
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • Seasoning to taste

Scrub and halve potatoes. Cover with water, bring to a boil, cover and cook 10 minutes or until almost tender.

Meanwhile, peel and thinly slice onions. Melt butter and oil in a large skillet over medium heat.

Saute onions until golden, about 10 minutes (we also added 2 chopped plum tomatoes).

Drain potatoes and add to onions. Season to taste (salt, pepper, garlic powder, etc.) and saute until potatoes are golden, about 8 minutes.

Cube ham and add to skillet. Cover and cook until heated through, about 5 minutes.

This recipe makes a lot of food. Enjoy the leftovers!
