The Pittsburgh Press once ran a similar recipe that my family enjoyed for many years. I lost the recipe and no one could remember it. When I taste-tested these for my article on TV cooking show host Arlene Williams, I realized the long-lost bean recipe had returned.
Arlene Williams' Calico Beans
- 1 pound ground beef
- 1/2 pound bacon
- 1/2 cup diced onion
- 15-ounce can kidney beans, drained
- 15-ounce can pork and beans
- 1/3 cup brown sugar
- 3 tablespoons ketchup
- 1/4 cup granulated sugar
- 1 tablespoon cider vinegar
- 1 teaspoon prepared mustard
Preheat oven to 350.
Brown ground beef and onion. Cook bacon, crumble into pieces and add to beef. Mix beans with meat mixture and add sugars, ketchup, vinegar and mustard. Mix well. Pour into casserole, cover and bake for 1 1/2 hours. Makes 8 to 10 servings.
