- 2/3 cups dried apricots
- 1/2 cup soft butter or margarine
- 1/4 cup granulated sugar
- 1 1/3 cups sifted all-purpose flour, divided
- 1/2 teaspoon double-acting baking powder
- 1/4 teaspoon salt
- 1 cup brown sugar, packed
- 2 eggs, well beaten
- 1/2 teaspoon vanilla extract
- 1/2 chopped walnuts
- Confectioners' sugar
Rinse apricots; cover with water and boil 10 minutes. Cool, chop.
Start heating oven to 350 degrees. Grease 8-by-8-by-2-inch pan.
Mix butter, granulated sugar and 1 cup of the flour until crumbly. Pack into pan. Bake 25 minutes.
Sift remaining 1/3 cup flour, baking powder and salt.
In larger bowl, with mixer at low speed, gradually beat brown sugar into eggs; mix in flour mixture, then vanilla. Stir in walnuts and apricots. Spread over baked layer. Bake 30 minutes or until done; cool in pan. Cut into 32 bars, then roll the bars in confectioners' sugar. Yield: 2 2/3 dozen.
