 Potato Latkes
- 10 medium baking potatoes
- 2 eggs, beaten
- 1 medium onion, chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Peel and shred potatoes. Add eggs, chopped onion, salt and pepper. Mix all ingredients well. Heat oil in a nonstick frying pan. Using a slotted spoon, place potato mixture in oil to make a pancake about 3 inches in diameter. Fry on both sides until light brown. Drain on paper towels. Makes 8 servings. Serve with applesauce and sour cream.
