Special Turkey-Day Sandwiches

  • 4 (2 ounces each) large slices of sourdough bread
  • 1 cup whole-berry cranberry sauce
  • 12 ounces ( 3/4 pound) already- sliced turkey breast (left- over or purchased)
  • 1 cup tightly packed pre- washed fresh baby spinach leaves
  • 4 slices (1 ounce each) Swiss cheese

The oven should already be heated to 450 degrees.

On a large baking pan, arrange the bread slices. Top each piece of bread with 1/4 cup of cranberry sauce. Spread the sauce to the edges of the bread with the back of a spoon. Top with equal portions of turkey and spinach leaves. Top each sandwich with cheese.

Place the baking sheet on the middle rack in the preheated oven, and bake for 10 to 13 minutes or until cheese is melted and spinach is wilted. Remove from the oven, and serve immediately.

Makes 4 open-faced sandwiches.
