Turkey Marinade

  • Use 3 parts olive oil to 1 part red wine vinegar
  • Garlic, probably a half-dozen cloves
  • A little water
  • Essence of Emeril spice mix, to taste (or
  • favorite Cajun seasoning)

Fill the injector with marinade and insert into raw turkey.

Note: Patty Irrgang says she had to give up seasoning with basil and oregano, because the herbs clogged the injector.
