Meat Loaf Ring

  • 1 pound lean ground beef

  • 1 beaten egg
  • 6 crushed soda crackers, or 1/4 cup dry bread crumbs
  • 1 small onion, minced
  • 1 tablespoon minced parsley
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic, minced
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped celery
  • 1/2 cup tomato juice
  • 1/4 cup ketchup

Thoroughly combine all ingredients except ketchup. Pack lightly into 9-inch glass dish, making a well in center. Place empty glass, right side down, in center of dish. Microwave on high 6 minutes, rotating a quarter turn halfway through cooking. Drizzle ketchup over top. Microwave on high 6 minutes longer, rotating a quarter turn halfway through cooking. Rest 5 minutes. Remove glass; baste off drippings. Serves 5 or 6.

Barbara's tips: Ingredients can easily be mixed by measuring them into a plastic bag and squeezing until well-mixed. After microwaving, paper towel may be used to blot drippings in the center.
