 Confetti Tortellini Salad
- 1 (16-ounce) package frozen tortellini
- 1/2 cup olive oil
- 1/4 cup wine vinegar
- 1 tablespoon fresh rosemary, chopped, or 1 teaspoon dried
- 1 teaspoon fresh thyme, chopped, or 1/2 teaspoon dried
- Salt and pepper to taste
- 1 (16-ounce) package broccoli slaw vegetables (in produce section) or 2 cups julienned
Cook tortellini according to package instructions. Whisk oil, vinegar and seasonings together in a small bowl. Drain tortellini and toss with dressing. Chill for 2 to 4 hours.
Toss in slaw vegetables before serving. Adjust seasoning as desired.
Tester's note: We added another tablespoon each of oil and vinegar and used about 1 teaspoon of salt and 1/2 teaspoon of pepper to season. Makes 8-10 servings.
