 Marshmallow Fluff Frosting
- 1 cup Marshmallow Fluff
- 2 large egg whites, at room temperature
- 1 cup sugar
- 1/4 teaspoon cream of tartar
- Pinch salt
- 1/4 cup water
- 1 teaspoon vanilla
In the top of a double-boiler over hot, not boiling, water, combine all ingredients except vanilla. With an electric hand mixer, beat until soft peaks form, about 7 minutes. Remove from heat, add vanilla and continue beating until stiff and somewhat cooled. Makes enough to fill and frost two 8- or 9-inch layers. It's best on a chocolate cake and liberally patted with flaked coconut.
