 Savory Stir-Fried Mushrooms
Try this quickie recipe from Czarnecki, and even if you can't explain the flavor of the dish, you'll begin to understand umami.
2 tablespoons peanut oil
- 1/2 cup sliced scallions (green onions)
- 12 ounces fresh white mushrooms, sliced
- 2 ounces fresh shiitake mushroom caps, sliced
- 1 tablespoon Japanese soy sauce (Kikkoman)
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
Heat a large skillet or wok over medium-high heat; add peanut oil. Stir-fry scallions for 30 seconds, then add mushrooms. Continue to stir-fry until liquid begins to evaporate and mushrooms begin to brown, about 6 minutes. Stir in soy sauce, salt and sugar. Serve over rice or pasta or with grilled meats. Makes about 4 servings.
