Where to dine on the King Fish in Pittsburgh

Thursday, May 30, 2002

By Marlene Parrish

This is a sampling of restaurants now serving Copper River king salmon. If your favorite haunt is not mentioned, give it a call.

The Original Fish Market in the Westin Convention Center, Downtown. 412-227-3657. Chef Daniel Mosedale's specials will change daily. Try the salmon sashimi and sushi.

Monterey Bay Fish Grotto on Mount Washington (412-481-4414) and in Monroeville (412-374-8530). Chef Greg Andrews will serve the salmon with Mediterranean seabeans and a chanterelle beurre blanc, also on a bed of fried spinach with tomato basil salsa.

Isabela on Grandview, Mount Washington. 412-431-5882. Chef Christian Frangiadis will serve king salmon with gazpacho beurre blanc and fried leeks or potato-crusted with a green curry coconut sauce.

Grand Concourse, Station Square. 412-261-1717. A promotion, Taste of the Northwest, will continue throughout the summer. Chef John Kline will prepare planked salmon and salmon Rockefeller, along with other regional seafood specialties.

Palomino Restaurant, Downtown, 412-642-7711. The Palomino restaurant group originated in Seattle about 30 years ago. One of chef Brent Novotny's entrees is simply grilled salmon with a vermouth and garlic butter baste, served with mixed wild greens and garlic mashed potatoes. Look for appetizers including salmon carpaccio and a soup made from the trimmings.

The Carlton Restaurant, One Mellon Bank Center. Downtown, 412-391-4099. Chef Dan Iammarino will serve fresh lemon-oil poached Copper River Salmon with lobster-avocado-Granny Smith salad in a crisp potato basket. Chef Mark Swomley suggests pan-seared salmon served with miso crab slaw, sesame-mango chutney and plum wine-ginger glaze.
