A classic from the beginning of my home ec teaching career, says Mary Beth Pastorius.
1 small head cabbage, shredded
1/4 cup butter or margarine
1/4 cup flour
2 cups milk
1 teaspoon salt
Buttered bread crumbs
Heat oven to 350 degrees.
Cook cabbage in boiling water until tender, about 3 to 5 minutes. Drain. In a separate pot, melt butter, stir in flour, salt and then the milk. Bring to a boil, stirring constantly, until sauce thickens. (We did this in the microwave.) Place half of the drained cabbage in the bottom of a greased baking dish. Cover with half of the sauce. Repeat with cabbage, then sauce, topping the mixture with buttered bread crumbs. Bake for 20 minutes or until the crumbs are nicely browned.
