Stacy estimates that she has been cooking for about five years. Her mom, Maryann, is the food service director for the Plum Borough School District and taught Stacy how to cook.
Stacy forgets where she got this rice recipe, but she enjoys making it. "I like making ice cream, also," she said.
Stacy's Fried Rice
2 1/2 tablespoons vegetable oil
1-pound package frozen mixed vegetables, thawed
3 cups cooked white rice, chilled
3 large eggs
2 tablespoons soy sauce
Heat 2 tablespoons of oil in a large skillet or wok, over medium heat. Add the thawed mixed vegetables and stir for about a minute.
Add rice, stir and cook for two minutes. Break the eggs into a small bowl and beat well. Move all of the rice to the outside of the pan and add the remaining 1/2 tablespoon of oil to the hole in the middle.
Add the beaten eggs and stir with a spoon until they are scrambled and in small pieces.
Stir the eggs into the rice mixture, add the soy sauce and heat 2 minutes.
