Instant White Bean Dip

With a can of beans, a blender or food processor, a drizzle of olive oil and a few dry herbs, you'll have an instant, satisfying dip in no time. Serve with crackers, pita toasts, chips or raw vegetables.

1 can white cannellini beans (15.5 ounces), drained
1 1/2 tablespoons olive oil
1 clove garlic, chopped
Salt and freshly ground pepper
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme

Toss all of the ingredients into the container of a blender or food processor and whirl to blend. Serve within 1 to 2 hours. Makes about 1 1/2 cups.

Optional additions: Dash of hot pepper sauce; 1 tablespoon chopped fresh basil and parsley instead of dried; 1 ripe tomato chopped and placed around the finished dip; black or kidney beans for the white beans.
