Pickled Ginger Vinaigrette

2 egg yolks
1 tablespoon sambal oelek, see note
1/2 cup pickled ginger
1 tablespoon granulated sugar
1/2 cup ginger vinegar
6 garlic cloves, peeled
2 tablespoons fermented black beans, soaked in rice wine
1 1/2 cup peanut oil
Salt and freshly ground white pepper to taste
Picked leaves of 1 bunch cilantro

Combine the yolks, sambal oelek, ginger, sugar, vinegar and garlic in a blender. Add the black beans and emulsify in the peanut oil. Season with salt and pepper.

Add cilantro and pulse for 10 to 15 seconds or until cilantro is just finely chopped.

Arrange chilled lobster meat on top of julienned vegetables. Serves 6.

Note: Sambal oelek is fresh ground chili paste and can be found in most Oriental grocery stores.
