Marinated Lobster With Ginger Vinaigrette

3 1 1/2-pound Maine lobsters
1 cup Daikon, julienned
1 cup carrot, julienned
1 cup kaiware sprouts
1 cup pickled ginger vinaigrette, recipe follows
Salt and pepper to taste

Remove lobster tail and claw from shell. Cut tail in half lengthwise and marinate in the refrigerator in 3/4 cup of pickled ginger vinaigrette for 1 hour.

Mix Daikon, carrots and kaiware. Add a touch of salt and pepper and toss with remaining vinaigrette. Reserve.
