To make raclette: purchase 7 to 9 ounces of raclette cheese or any meltable semi-hard cheese per person. Cut in 1/10-inch slices and melt in a raclette grill or other method described above (we used the grill). Sprinkle with freshly ground pepper, and serve with hot, unpeeled boiled potatoes, onions and pickles and eat immediately. Serve with a chilled, dry white wine.
