Our testers agreed. There is no flour and the result is a nice, light peanut butter cookie that is great with a glass of milk.

Easy Peanut Butter Cookies

1 cup peanut butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla extract

Preheat oven to 350 degrees.

In a bowl, mix all ingredients. Drop by tablespoons on ungreased baking sheets, about two inches apart. You can flatten with a fork. Bake for 15 to 18 minutes until set. Makes about 2 dozen cookies.
