Welsh Pumpkin Pie (Poten Bwmpen)

This traditional Welsh recipe is a true pumpkin pie, rather than a custard. The only milk is in a glaze on the top. -- Samantha Bennett, Features Department copy editor.

1 9-inch pie crust, homemade or purchased
2 cups cooked pumpkin, densely packed
Pinch each of cinnamon, ginger and mace
1/2 cup brown sugar
2 tablespoons seedless raisins
1 tablespoon butter, melted
1 egg beaten with 2 tablespoons cream or milk

Line a greased 9- to 10-inch flan pan or pie dish with the pie crust dough and brush the bottom with a little of the beaten egg to prevent the bottom from getting soggy.

Mix together the pumpkin, sugar, butter, spices, raisins and pour into pie crust. Add the cream or milk to the egg and pour evenly over the top. Bake in 350-degree oven for about 40 minutes. Cool. Serve cold.
