Cooking with Kids: Clam chowder a stirring effort

Anna's mom, Gwen, said her daughter has been a budding cook for about a year. "Shortly after she turned 3, she wanted to be part of the process," she said, "For her fourth birthday, she got an apron and Easy Bake Oven."

Anna likes to make and eat soup. This chowder recipe is easy and, according to Gwen, the whole family will love it. "Anna likes this one since it's more about pouring and stirring so she can participate more," said Gwen.

Clam Chowder

1 1/2 tablespoons minced onion
6 tablespoons butter or margarine
6 tablespoons flour
3 (7 1/2-ounce) cans minced clams in liquor
3 cups clam juice
Paprika, salt and pepper to taste
1 can Bookbinder New England Clam Chowder
1 1/2 cups light cream
Instant mashed potato flakes (we used about 1/2 cup)

Saute onion in butter until golden. Stir in flour. Add liquor from the clams. Add the clam juice and seasonings; heat until slightly thickened. Stir in Bookbinder soup and cream. As soup cooks, add mashed potato flakes to achieve desired thickening. Serve with oyster crackers.
