1 head green leaf lettuce, cut up, washed and dried
1 head radicchio, cut up, washed and dried
1 cup walnuts, lightly toasted and coarsely chopped
1 cup dried cranberries or dried cherries
2 small logs plain goat cheese, cut into slices
3/4 cup balsamic vinaigrette
Preheat oven to 350 degrees.
Mix lettuce and radicchio together. Arrange on four salad plates. Sprinkle walnuts and cranberries evenly on top.
Cover a baking sheet with foil and spray lightly with nonstick spray. Put rounds of goat cheese on sheet and put in oven for 4 to 6 minutes, or until the cheese starts to soften.
Drizzle salads with vinaigrette and top with warmed goat cheese. Serve immediately. Makes 4 servings.
