1 cup fresh herbs, including fresh oregano and fresh basil
2 cloves garlic, peeled
Small handful whole peppercorns, about 20 to 30
2 small dried hot peppers
3 cups white wine vinegar
Place herbs, garlic, peppercorns and pepper in jar. Pour vinegar over them. Cover and let sit in cool dark place for 2 weeks, shaking every day or two. Can use as is, or strain and add to fresh herbs in a decorative bottle. Add some olive or salad oil and this tastes like Italian dressing.
Makes about 3 cups.
