From France to your table.
PG Food receives many e-mails from the Tri-State area. But recently we received one from Europe -- sent by Alison Kerr Bonomi in France. Here's an excerpt:
"A native of McMurray, I now follow the PG Online from the west coast of France. I've lived in France for the past 8 1/2 years, the past 7 in La Rochelle, on the Atlantic coast.
"During my senior year at Allegheny College I met a charming young French TA (teaching assistant); to make a long story short, here I am in France, married with children.
"I am very interested in recipes and food, and wanted to share the following summer standard.
"This is a favorite of my French husband and his family."
Salade de tomates a la Francaise
4 or 5 vine-ripened tomatoes
2 green onions
1/2 cup cubed chevre or feta cheese
Chopped fresh parsley, to taste
Cured black olives, optional
Pepper, to taste
Cut the tomatoes into quarters.Thinly slice the green onion. Place into a large bowl. Add the cheese. Pour the vinaigrette over salad and toss. Garnish with parsley and olives if so desired. Add freshly ground cracked pepper to taste.
Julien's Vinaigrette
1 to 2 teaspoons Dijon mustard
2 tablespoons red wine vinegar
4 tablespoons olive oil
Salt and pepper. to taste
In a small bowl, whisk together mustard and vinegar until mustard is dissolved. Slowly drizzle in olive oil, whisking constantly, and (this is important) without changing direction.
