Serve this on grilled or toasted rounds of baguette.
4 anchovy fillets in oil, drained
Soak the anchovy fillets in a little milk for 10 minutes, then drain and pat dry. Chop finely and beat into the softened butter until combined. (This can be done a day in advance and kept covered in the refrigerator until needed.)
