Can of vegetable oil cooking spray or a little canola oil
1 1/2 cups unbleached white flour (or 3/4 cup each of unbleached white flour and whole-wheat pastry flour)
2 cups rolled oats
1/4 cup oat bran or wheat germ
1/2 teaspoon cinnamon
1/2 teaspoon salt
2/3 cup brown sugar
1 cup apple juice
1/2 cup unsweetened applesauce
1/4 cup canola oil
1 teaspoon vanilla extract
3/4 cup semisweet chocolate chips
Extras (you choose):
1/2 cup dried cranberries or dried cherries
1/2 cup shredded unsweetened coconut
1/2 cup chopped peanuts or almonds

Turn on the oven to 375 degrees. Spray or brush the pan with oil.

Put in a large bowl, the flour, oats, oat bran, cinnamon and salt. Add 2/3 cup brown sugar and mix it in with your very clean fingers. Make a dent with a wooden spoon in the center of the mixture. Pour in apple juice, applesauce, oil, vanilla and chocolate chips. If you like, you can also add the extras.

Mix slowly with a wooden spoon or with your hands until everything is damp and you don't see any more flour. Scoop out all of the batter from the bowl and spread and pat it evenly in the pan. Ask an adult to put the pan in the oven. Set the timer for 30 minutes. Ask an adult to take the pan out of the oven and cut the rectangle into squares. Put the squares on a baking tray. Ask an adult to put the tray in the oven. Bake for 15 minutes longer. Ask an adult to remove the pan from the oven. Cool for 15 minutes before serving. Makes 24 squares.
