 Hawaiian Baked Beans
1 1/2 cups drained crushed pineapple 2 tablespoons finely chopped onion 2 tablespoons brown sugar (can omit or use diabetic sugar substitute) 1 tablespoon ketchup 1 teaspoon prepared mustard 2 cans (16 ounces) vegetarian baked beans 1 pound meatless hot dogs (Veggie Dogs or other brand), sliced into 1-inch pieces
Drain pineapple well. Combine pineapple with remaining ingredients in a 2-quart casserole dish. Bake in a preheated 350-degree oven for an hour. Makes 6 to 8 servings.
