Chicken Cappillo

The aunt of a friend published a small cookbook, and this recipe comes straight from its pages. The author -- and my friend's -- last name is Cappillo. My family never met either of them, so they call this dish "Chicken Lori."

4 chicken breast halves
Melted margarine or butter (about 1/2 stick)
Equal parts bread crumbs and grated Parmesan cheese (about 1 slice bread plus 4 tablespoons cheese per half breast)
Garlic salt, pepper and paprika, to taste

Clean chicken breasts. Dip into melted margarine. Coat both sides.

Cover with mixture of bread crumbs and grated Parmesan cheese. (I use stale wheat bread, and I pull it apart in small chunks.)

Sprinkle with garlic salt, pepper and paprika. Or, just sprinkle with any of Emeril's spice mixtures.

Drizzle remaining margarine over chicken.

Bake about 45 minutes at 325 degrees. Makes 4 servings.
