Sausage and Egg Casserole

1/2 pound bulk pork or turkey breakfast sausage
1 1/2 cups shredded Cheddar cheese
6 eggs
Salt and pepper to taste
1/3 cup heavy cream

In a skillet, brown the sausage over medium heat. Drain and set aside.

Grease a 9-inch-square baking pan or casserole dish. Sprinkle 3/4 cup of the cheese in the bottom.

In a bowl, beat the eggs and pour over the cheese. Add salt and pepper to taste. Pour the cream over the eggs and sprinkle the sausage over all. Top with the remaining 3/4 cup cheese. The casserole may be covered and refrigerated overnight at this point. When ready to bake, preheat the oven to 350 degrees and bake for 30 minutes or until puffed and golden. Cut into squares and serve hot. Makes 4 servings.
