Cranberry Dream Bars

Cranberry Dream Bars

1 cup margarine, softened
3/4 cup granulated sugar
3/4 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract

21/4 cups all-purpose flour
1 teaspoon baking powder

12-ounce package white chocolate chips

6-ounce package sweetened dried cranberries
1 cup coarsely chopped macadamia nuts (or any nuts)

Combine margarine (don't use spread), granulated sugar and brown sugar in a large mixing bowl. Beat with an electric mixer on medium speed until well blended. Add eggs and vanilla, and beat well.

Combine flour and baking powder; gradually add to mixture. Stir in white chocolate chips (we used a combination of Bernard C. White chocolate drops and Merckens white chocolate disks, chopped), dried cranberries and nuts (we used macadamia).

Spread dough evenly in greased 15-by-10-by-1-inch baking pan (jelly roll pan).

Bake in a preheated 350-degree oven 20 minutes or until light golden brown. Do not overbake. Cool in a pan, then cut into bars. Store in an airtight container. These bars freeze well.

Makes 4 dozen 11/2- by-21/2- inch bars.
