Rebecca learned to make these muffins with her grandmother, Patty Levine. Betsy Brown says, "My mom said these are truly kitchen-sink muffins because you can throw in whatever you have -- raisins, extra jelly, whatever. We love these muffins."
Rebecca agrees, "They are really good."
The young cook enjoys being in the kitchen and particularly likes to bake. She offers these tips for other cooking kids. "Always wash your hands before you cook and always cook with a parent or grown-up."
Rebecca's Healthful Muffins
1 cup oat bran
1 cup regular uncooked oatmeal
1/2 cup brown sugar
2 teaspoons baking powder
1 cup apple juice or 1 cup milk
2 egg whites, slightly beaten
2 tablespoons vegetable oil
1/2 teaspoon cinnamon
4 tablespoons vanilla yogurt (optional), see note
1 tablespoon grape jelly (optional) see note
1/2 cup raisins (optional), see note
Heat oven to 425 degrees. Mix all ingredients together -- add a little extra oatmeal or oat bran if the batter seems too loose or wet. Bake 15 to 17 minutes or until brown or until a toothpick comes out clean.
Note: You may use any flavor of yogurt or jelly. The raisins, jelly and yogurt give the muffins more flavor.
