Lidia Bastianich's Strawberries with Balsamic Vinegar
The original recipe called for traditional balsamic vinegar, a gorgeous, sweet-tart, syrupy vinegar made from local grapes in Modena, Italy. Traditional balsamic differs from readily available (commercial) balsamic vinegar because it is aged for at least 12 years and has a low acidity level. We made this with commercial balsamic vinegar from Modena and it was delicious.
3 pints ripe strawberries, hulled and sliced 2 tablespoons good-quality balsamic vinegar 2 to 3 tablespoons sugar 2 tablespoons fresh-squeezed orange juice, optional
Put berries in bowl. Add vinegar, mix well and marinate 15 to 20 minutes. Add sugar and, if desired, orange juice. Mix thoroughly and serve. Makes 6 to 8 generous servings.
