Jane Lee Rankin included this recipe "Cookin' Up a Storm," a remembrance of her Southern nanny, Annie Johnson. It's plain and delicious. If you want more spice, serve it with salsa. The original recipe used 4 tablespoons sugar, but we prefer it less sweet.
4 large eggs
1 cup heavy cream
2 to 4 tablespoons sugar
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper (optional)
1 pound frozen corn kernels, thawed and well drained
4 tablespoons unsalted butter
Preheat oven to 350 degrees. Butter an 8-by-11-by-1/2-inch or 9-by-9-inch glass baking dish.
In large bowl, with wire whisk, beat eggs, cream, sugar, salt and pepper, if using. Stir in corn.
Pour into prepared baking dish. Slice butter thin and arrange on top.
Bake, uncovered, 40 to 50 minutes, or until top is golden brown and casserole is just set.
Makes 6 to 8 side-dish servings or up to 10 servings as part of a larger spread.
