According to Rachel's mom, Cheryl, Rachel has been cooking since she was a toddler. "We have a video of her helping me mix brownies when she was 18 months old." Cheryl's friends gave them this recipe a few years ago, and Rachel has been making it ever since. Not only is it easy, but it's a taste winner. "Everyone likes it," said Rachel.
She's more of a baker than a cook. In addition to the Corn Pudding, she also enjoys baking cookies and brownies. She offered this tip for other cooking kids: "If you are cooking something on the stove, always have a parent with you."
Rachel's Famous Corn Pudding
2 (15-ounce) cans creamed corn
1 (7 1/2-ounce) package corn muffin mix
2 eggs, beaten
1/2 cup margarine, melted
Mix all ingredients and pour into a greased 2-quart casserole dish. Bake for 45 minutes at 350 degrees.
