Hot Crab Dip

This delicious recipe for Hot Crab Dip comes from Maui's "Ohana Style Cookbook," a community book to benefit The Hawaii Bone Marrow Donor Registry. It takes on an Hawaiian flair with its Maui sweet onions.

The word ohana means family in Hawaiian, and the word also refers to a small cottage where relatives stay when they visit.

We served the delicious hot dip with crackers at the weekly Wednesday night pupu party at Honokeana Cove, a small group of condominiums near Napili Beach, where we vacationed.

Pupu, or appetizer, parties are a weekly event created by guests at the cove, which is not far from Lahaina, the old whaling town.

-- Suzanne Martinson

2 cups mayonnaise (we used reduced-fat mayo)
8-ounce can artichokes (not marinated), well drained
1 cup crab meat or imitation crab meat (we used canned crab)
1/2 cup grated fresh Parmesan cheese
1/2 cup chopped white or green onion (we used Maui sweet onions)
1/4 teaspoon Tabasco sauce
1 teaspoon parsley flakes
Paprika to taste

Mix all ingredients together and spread in 9-by-9-inch square or 9-inch round baking dish. Sprinkle with paprika. Broil 10 minutes before serving or until heated through. Serve with crackers or bread.
