1 large (1-pound) pork tenderloin
1/2 cup Caesar-style salad dressing
4 pita rounds
1/2 small red onion, thinly sliced
1/2 small cucumber, peeled, seeded and chopped
1/4 cup vinaigrette salad dressing
Preheat the oven to 450 degrees. Cut pork tenderloin into strips about 2 inches by 1/2 inch. In a small bowl, mix the pork strips with Caesar dressing. Place the pork on a baking tray and bake for 15 minutes or until pork is lightly browned and cooked through. Meanwhile, place pita rounds on a griddle to warm on both sides. Divide the pork strips on the pita rounds and top with onion slices and cucumber. Drizzle with salad dressing. Use both hands to bend and grasp the sandwich.
