Choose the biggest tenderloin you can find. Hogs come in all sizes. To toast sesame seeds, place them in a dry skillet and place over a low fire until light brown. This is a favorite recipe from chef Rozanne Gold.
2-pound pork tenderloin
1/3 cup hoisin sauce
1/3 cup or more sesame seeds, toasted
Preheat oven to 400 degrees. Brush tenderloin with 3 tablespoons hoisin sauce. Roll pork in sesame seeds to coat evenly. Increase quantity if pork is not completely coated. Place on baking sheet that has been spritzed with non-stick spray. Roast for 20 to 25 minutes.
Meanwhile, in a small pot, combine remaining sauce and 3 tablespoons water. Heat gently until sauce is smooth. Remove pork from oven. Let sit 5 to 10 minutes before slicing. Add any pan juices to hoisin sauce. Serve meat with sauce. Makes 3 to 4 servings.
