4 tablespoons butter
3/4 cup bread crumbs, Japanese style preferred (panko)
1 teaspoon onion salt
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
Dash of hot pepper sauce
2 tablespoons lemon juice
1 tablespoon parsley, finely chopped
4 cod fillets, 1/2 pound each
Season and preheat the plank to 350 degrees.
Melt the butter in a small saucepan. Combine the bread crumbs, onion salt, mustard, both sauces, lemon juice and parsley.
Place the cod fillets on the preheated plank. Spoon the bread crumb mixture on top of each and pat down to hold in place.
Bake for 20 minutes or until the fish is done and the topping is lightly browned. Serves 4.
