Delightful Diamond Cream Squares

For the crumb crust:
10 tablespoons butter, softened
2/3 cup brown sugar
2 cups flour
1/2 cup chopped nuts

Cream together butter and brown sugar. Add flour and nuts to creamed mixture and mix well. Set aside 2 cups of this crumb mixture. Press remaining crumb mixture in bottom of a 13-by-9-inch baking dish. Bake at 350 degrees for 12 to 15 minutes.

For the filling:
1 cup sugar
2 (8-ounce) packages cream cheese, softened
2 eggs
2 tablespoons milk
2 tablespoons lemon juice
1 teaspoon vanilla

Cream together sugar and cream cheese. Add eggs, milk, lemon juice and vanilla. Mix well.

Pour over the baked crust. Sprinkle the reserve crust mix (from above) over the top. Bake for another 25 minutes at 350 degrees. When cool, refrigerate until chilled. Cut into diamond shapes.

Note: These can be stored in the refrigerator or frozen.
