1/2 cup butter, softened
1/2 cup white sugar
2 eggs
1 cup milk
1/2 cup plain yogurt
1 teaspoon vanilla extract
3 cups self-rising flour
1/2 cup optional ingredients
One of the following: blueberries, nuts, apple chunks, chocolate chips,
cranberries, raisins
Preheat oven to 350 degrees
Place muffin cups into a 12 muffin pan.
In a large bowl, cream together butter and sugar. Beat in one egg at time. Mix until each is incorporated. Add milk,yogurt, and vanilla.
Blend in flour, mix until just combined. Fold in the optional ingredients of your choice.
Scoop batter into prepared pans.
Bake 15 to 20 minutes.
Cool completely before removing from pan
Tester's note: This is a thick batter. Because of the yogurt, these muffins will not rise as much as a other muffin recipes. Completely fill the 12 muffin cups.
