Stephen is a lucky boy. His mother, Debbie, told him he could choose whatever he wanted to put into cookies they were making. Like every other 9-year-old, Stephen chose some pretty good things -- Miniature M&M's, Skor English Toffee chips, and chocolate bars. The result was cookies that Stephen dubbed "Yummy Tummy" cookies.
Stephen has liked to bake with his mom and enjoys coming up with new things. "He loves to give what he bakes away. He especially likes giving his baked goods to his great-grandfather," says Debbie.
Stephen Cohen's "Yummy Tummy" Cookies
1 cup butter (softened)
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2 1/2 cups oatmeal (grind to powder in food processor or blender)
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12-ounce bag of mini baking M&M's
1 cup Skor English Toffee Chips
4 plain Hershey bars (cut into small pieces)*
1 cup coconut (optional)
Cream butter and sugars; add eggs and vanilla in heavy mixer. Slowly add flour and oatmeal. Add salt, baking powder and baking soda. Fold in remaining ingredients. Use cookie scooper and place on parchment-lined cookie sheet. Bake at 375 degrees for 10 minutes. Makes about 46 cookies.
Note: We made these cookies twice. The second time, we had no candy bars so we used one cup of Hershey milk chocolate chips. The cookies were just as delicious!
