Lillian Sheffler of Mount Washington sent us this recipe with a note: "This is a good-tasting cake, and peaches can be used instead of apples. It can be frozen."
1/3 cup margarine or butter
1/2 cup milk
2 cups flour
2 1/2 teaspoon baking powder
3/4 cup sugar
2 eggs
1 1/2 teaspoons vanilla
Topping:
4 or 5 peeled and sliced apples
1/3 cup sugar
1 teaspoon cinnamon
2 tablespoons margarine or butter
Preheat oven to 375 degrees. Combine margarine and sugar -- add eggs and mix.
Combine flour, baking powder, salt. Combine milk and vanilla. Add milk mixture alternately with the milk to the margarine, sugar and eggs. Spread batter in a 9-by-12-inch pan. Place apples over batter in rows, overlapping each slice. Mix the remaining sugar, cinnamon and margarine together; sprinkle over apples. Bake 45 minutes. Serve warm or at room temperature.
