Farm Fresh: Summery salad has autumn's apples Thursday, September 14, 2000 Tested by Arlene Burnett
Fall is apple season -- so we're showcasing apples with this wonderful salad. Apple Salad with Lemon-Poppy Seed Dressing combines apples, raisins, pecans and celery with a tasty dressing made up of honey, salad oil and, of all things, lemonade concentrate.
Apple Salad with Lemon-Poppy Seed Dressing
Salad: 5 Red or Golden Delicious apples, peeled, cored and cut into bite-size pieces 1 1/2 cups raisins 1 cup chopped pecans 1 1/2 cup chopped celery
Dressing: 6 tablespoons salad oil 3/4 cup honey 2 teaspoons poppy seeds 1/2 cup frozen lemonade concentrate
In a large bowl, mix the apples, raisins, pecans and celery. In a separate bowl, whisk the oil, honey, poppy seeds and lemonade concentrate. Add the dressing to the apple mixture and mix thoroughly. Makes 6 to 8 servings.
