1/4 cup chopped fresh green mint
1/4 cup white sugar
1/4 cup boiling water
1/2 cup white vinegar
Wash and dry mint, remove stalks, chop finely.
Boil sugar and water for one minute; add mint and vinegar. Allow to stand for at least 15 minutes.
Stir well before using.
Serve with roast lamb and vegetables.
Can be stored in refrigerator for months.
